Cooks prepare and cook a wide variety of foods. They are employed in restaurants, hotels, hospitals and other health care institutions, central food commissaries, educational institutions and other establishments. Cooks are also employed aboard ships and at construction and logging campsites. Apprentice cooks are included in this unit group.

Cooks perform some or all of the following duties:
  • Prepare and cook complete meals or individual dishes and foods
  • Prepare and cook special meals for patients as instructed by dietitian or chef
  • Schedule and supervise kitchen helpers
  • Oversee kitchen operations
  • Maintain inventory and records of food, supplies and equipment
  • May set up and oversee buffets
  • May clean kitchen and work area
  • May plan menus, determine size of food portions, estimate food requirements and costs, and monitor and order supplies.
  • May hire and train kitchen staff

Cooks may specialize in preparing and cooking ethnic cuisine or special dishes.

Education & Job Requirements for Cooks in Saint John--St. Stephen Region

Education and job requirements can vary by region. Workers in regulated occupations require a licence to work legally. Workers in non-regulated occupations do not require a licence, but employers may have other certification requirements.

Cook is a designated occupation for apprenticeship under the Apprenticeship and Occupational Certification Act in New Brunswick.

REQUIREMENTS FOR APPRENTICESHIP
To register as an apprentice, you must have successfully completed and possess a Grade 12 diploma, or an Adult High School diploma or a GED or a Diploma of Apprenticeship in another occupation, and be employed in the occupation with an employer who is willing to enter into an apprenticeship agreement with you.

DURATION
This training program requires 3 years minimum (5400 hours) of employment and training.

COMPLETION OF THE APPRENTICESHIP PROGRAM
The apprentice is awarded a New Brunswick Diploma of Apprenticeship and a Certificate of Qualification upon successful completion of 5400 hours of on the job and technical training and the final examination. In most instances, an Interprovincial Red Seal will be affixed to these documents.

CERTIFICATE OF QUALIFICATION EXAMINATION
A person who has gained the equivalent of 5 years of practical experience in the Cook occupation may apply to challenge the certification examination. Successful candidates will receive a New Brunswick Certificate of Qualification. In most instances, an Interprovincial Red Seal will be affixed to the document.

Local Skills Requirements

The most essential skills for cooks are oral communication, problem solving and job task planning and organizing.

Cooks need to be physically fit and able to stand for extended periods of time during the shift. Team work is important, as they must co-ordinate their activities with co-workers to ensure optimum use of work space and equipment. This is a high pressure job, requiring excellent organizational skills. Cooks also need to be able to accept constructive criticism and to be adaptable to quickly changing needs in a fast paced environment. Cooks have to be extremely focused and attentive to details. Being well disciplined and reliable are definite assets.
