Cooks prepare and cook a wide variety of foods. They are employed in restaurants, hotels, hospitals and other health care institutions, central food commissaries, educational institutions and other establishments. Cooks are also employed aboard ships and at construction and logging campsites. Apprentice cooks are included in this unit group.

Cooks perform some or all of the following duties:
  • Prepare and cook complete meals or individual dishes and foods
  • Prepare and cook special meals for patients as instructed by dietitian or chef
  • Schedule and supervise kitchen helpers
  • Oversee kitchen operations
  • Maintain inventory and records of food, supplies and equipment
  • May set up and oversee buffets
  • May clean kitchen and work area
  • May plan menus, determine size of food portions, estimate food requirements and costs, and monitor and order supplies.
  • May hire and train kitchen staff

Cooks may specialize in preparing and cooking ethnic cuisine or special dishes.

Education & Job Requirements for Cooks in Prince Edward Island

Education and job requirements can vary by region. Workers in regulated occupations require a licence to work legally. Workers in non-regulated occupations do not require a licence, but employers may have other certification requirements.

Local Employment Requirements

Trade certification is available but voluntary in P.E.I. To be eligible for trade certification new entrants require Grade 12, or equivalent, plus completion of a three-year apprenticeship program. Application for trade certification is also available to those who have worked in the trade for 4 out of the last 10 years, and who have some high school, college or industry courses in cooking.

Interprovincial trade certification (Red Seal) is also available to qualified cooks and allows for interprovincial mobility.

Local Training

Holland College:

The Culinary Arts program provides students with the practical skills and knowledge they require to enter the culinary profession as well-trained cooks. It is a two year program offered in Charlottetown.

The Applied Degree in Culinary Operations prepares cooks and culinarians with additional skills required to advance their careers into supervisory roles.

The Culinary Institute's Pastry Arts program prepares students to enter the pastry profession as well-trained pastry cooks. It is a one year program offered in Charlottetown.

In addition, Holland College has an articulation agreement with UPEI. Graduates of the Culinary Arts program can receive 60 semester hours credit towards a Bachelor of Business in Tourism Hospitality degree.

Innovation and Advanced Learning - Apprenticeship Section:

The Apprenticeship Section will arrange training for registered apprentices. In-school apprenticeship training is provided at Holland College. Five weeks of block release training is offered in Charlottetown for this occupation.
